Beef & Black Bean Chilli

Smoky, slow-simmered beef chilli loaded with black beans and tomatoes. 45g protein, 14g fibre, and tastes even better next day.

Ingredients

  • Lean ground beef (5% fat)500 g
  • Olive oil1 tbsp
  • Onion, diced1
  • Red pepper, diced1
  • Garlic, minced3 cloves
  • Smoked paprika2 tsp
  • Ground cumin2 tsp
  • Chipotle paste or chilli powder1 tbsp
  • Chopped tomatoes2 x 400g tins
  • Black beans, drained2 x 400g tins
  • Beef stock200 ml
  • Dark chocolate10 g
  • Avocado, coriander, Greek yogurt, limeto serve

Method

    Heat oil in a heavy pot. Brown beef 6 minutes, breaking it up. Push to one side, add onion and pepper, cook 5 minutes.

    Add garlic and spices, stir 1 minute until fragrant.

    Pour in tomatoes, beans and stock. Simmer uncovered 25 minutes, stirring occasionally, until thick.

    Stir in chocolate to deepen the flavour. Season. Serve topped with avocado, coriander, yogurt and a squeeze of lime.
