Korean Beef Bowl with Brown Rice

Sweet, savoury ground beef over nutty brown rice with quick-pickled veg and a jammy egg. 35 minutes, 40g protein per bowl.

Ingredients

  • Lean ground beef (5% fat)500 g
  • Brown rice, cooked300 g dry
  • Garlic, minced3 cloves
  • Fresh ginger, grated1 tbsp
  • Low-sodium soy sauce3 tbsp
  • Honey or maple syrup1 tbsp
  • Toasted sesame oil1 tsp
  • Cucumber, ribboned1
  • Carrots, julienned2
  • Rice vinegar2 tbsp
  • Eggs, soft-boiled4
  • Spring onions and sesame seedsto serve

Method

  1. 1

    Cook brown rice per packet. Toss cucumber and carrots with rice vinegar and a pinch of salt; set aside.

    Brown beef in a hot dry pan, breaking it up, 5-6 minutes. Add garlic and ginger, cook 1 minute.

    Stir in soy, honey and sesame oil; simmer 2 minutes until glossy.

    Divide rice between bowls, top with beef, pickled veg and a halved soft-boiled egg. Scatter spring onions and sesame seeds.
