Ingredients
- Lean ground beef (5% fat)500 g
- Brown rice, cooked300 g dry
- Garlic, minced3 cloves
- Fresh ginger, grated1 tbsp
- Low-sodium soy sauce3 tbsp
- Honey or maple syrup1 tbsp
- Toasted sesame oil1 tsp
- Cucumber, ribboned1
- Carrots, julienned2
- Rice vinegar2 tbsp
- Eggs, soft-boiled4
- Spring onions and sesame seedsto serve
Method

Cook brown rice per packet. Toss cucumber and carrots with rice vinegar and a pinch of salt; set aside.

Brown beef in a hot dry pan, breaking it up, 5-6 minutes. Add garlic and ginger, cook 1 minute.

Stir in soy, honey and sesame oil; simmer 2 minutes until glossy.

Divide rice between bowls, top with beef, pickled veg and a halved soft-boiled egg. Scatter spring onions and sesame seeds.
