Ingredients
- Bone-in skinless chicken thighs8
- Olive oil2 tbsp
- Garlic cloves, sliced4
- Cannellini beans, drained2 x 400g tins
- Chicken stock250 ml
- Lemon, zest and juice1
- Fresh thyme4 sprigs
- Baby spinach or kale150 g
- Salt and black pepperto taste

Heat oil in a large skillet over medium-high. Season chicken, sear skin-side down 5 minutes until golden, flip and cook 3 more. Remove.

Lower heat, add garlic and thyme, cook 1 minute. Add beans, stock, lemon zest and juice. Simmer 2 minutes.

Nestle chicken back in, cover and simmer 18-20 minutes until cooked through (74°C).

Stir in greens until wilted. Taste, season, finish with extra lemon and serve.
