Lemon Herb Chicken with White Beans & Greens

One-skillet chicken thighs braised with creamy cannellini beans, garlic and wilted greens. High protein, fibre-rich, ready in under 40 minutes.

Ingredients

  • Bone-in skinless chicken thighs8
  • Olive oil2 tbsp
  • Garlic cloves, sliced4
  • Cannellini beans, drained2 x 400g tins
  • Chicken stock250 ml
  • Lemon, zest and juice1
  • Fresh thyme4 sprigs
  • Baby spinach or kale150 g
  • Salt and black pepperto taste

Method

    Heat oil in a large skillet over medium-high. Season chicken, sear skin-side down 5 minutes until golden, flip and cook 3 more. Remove.

    Lower heat, add garlic and thyme, cook 1 minute. Add beans, stock, lemon zest and juice. Simmer 2 minutes.

    Nestle chicken back in, cover and simmer 18-20 minutes until cooked through (74°C).

    Stir in greens until wilted. Taste, season, finish with extra lemon and serve.
