- Chopped spinach1 cup
- Diced red pepper1/2
- Crumbled feta1/3 cup
- Salt and black pepperto taste

Preheat the oven to 180°C / 350°F and line a 12-hole muffin tin with silicone cases.

Whisk eggs in a large bowl, then stir in cottage cheese, spinach, red pepper, feta, salt and pepper.

Divide evenly between the cases — they will rise, so don't overfill.

Bake for 20–22 minutes until set and lightly golden on top.

Cool, then store in the fridge for up to four days, or freeze.
