- Soft goat cheese40g
- Olive oil or butter1 tsp
- Fresh dill or chives1 tsp
- Salt and pepperto taste

Whisk eggs with salt and pepper until smooth.

Heat oil in a non-stick pan over medium heat. Add spinach and wilt for 30 seconds, then push to one side.

Pour eggs into the pan. Tilt and swirl, lifting edges with a spatula to let uncooked egg run underneath.

When the top is just set, crumble goat cheese over one half and scatter herbs.

Fold the empty half over the cheese, slide onto a plate, and serve with extra herbs.
