Ingredients
- Chicken breasts, halved horizontally4
- Olive oil1 tbsp
- Garlic cloves, minced4
- Sun-dried tomatoes, sliced80 g
- Chicken stock200 ml
- Light cream or evaporated milk150 ml
- Parmesan, grated40 g
- Baby spinach150 g
- Italian herbs, salt, pepperto taste
Method

Season chicken with salt, pepper and Italian herbs. Sear in olive oil over medium-high, 4 minutes per side until golden. Remove.

Add garlic and sun-dried tomatoes, cook 1 minute. Pour in stock, scrape the pan, simmer 2 minutes.

Stir in cream and parmesan until smooth. Return chicken, simmer 5 minutes until cooked through.

Fold in spinach until just wilted. Serve with whole-grain pasta or crusty bread.
