Tuscan Chicken Skillet with Spinach & Sun-Dried Tomato

Pan-seared chicken in a lighter creamy sauce with garlic, sun-dried tomatoes and spinach. Cooks in one pan in 25 minutes.

Ingredients

  • Chicken breasts, halved horizontally4
  • Olive oil1 tbsp
  • Garlic cloves, minced4
  • Sun-dried tomatoes, sliced80 g
  • Chicken stock200 ml
  • Light cream or evaporated milk150 ml
  • Parmesan, grated40 g
  • Baby spinach150 g
  • Italian herbs, salt, pepperto taste

Method

  1. 1

    Season chicken with salt, pepper and Italian herbs. Sear in olive oil over medium-high, 4 minutes per side until golden. Remove.

    Add garlic and sun-dried tomatoes, cook 1 minute. Pour in stock, scrape the pan, simmer 2 minutes.

    Stir in cream and parmesan until smooth. Return chicken, simmer 5 minutes until cooked through.

    Fold in spinach until just wilted. Serve with whole-grain pasta or crusty bread.
